Last winter I did a major redecoration of the interior of my SJ21 for the exact same reasons... to get my wife out on the water.I used indoor/outdoor carpet from a local home improvement store and glued it with contact cement to the sides of the hull and on the keel trunk. I had also previously re-painted the ceiling. I added a shallow teak plywood box at the back of each corner of the cabin top to house a pair of halogen cabin lights and the few switches for running lights, etc.
The carpet made a big difference in the feel of the space, it was suddenly felt 'cozy' to lean up against the sides of the boat. The lighting helps too. I chose low-wattage halogens because they have a much warmer light than LED's.
In the Pacific NW cabin heat can make a big difference. I managed to tuck a lunchbox-sized Wallas kerosene forced-air heater into the transom (where it is vented) and ducted the hot air up to the cabin. It takes up no cabin space at all. If I hadn't found the Wallas, I probably would have installed a Force-10 kerosene heater as it's exhaust pipe is only 1".
