One key part of lifting a juan is to get the bottom of the hull 50" off the ground so you can drop the keel all the way. If you are going to the effort of lifting your boat, it's worth it to be able to drop the keel all the way. It allows you to install a keel gasket properly and much easier. Also I would suggest the Keel fairing from Blairs Wind and Wood Boats.http://www.sj21fleet1.org/?Tips_and_Tricks:Keels
This allows you to install the gasket from the trailing edge of the keel, aft to the end of the slot. Much easier.
