Halyards To Cockpit For Dummies, Please



Howdy, and thank you in advance for having the patience to reply.

For the record I'm a Kentucky brown water canoe sailor trying to figure out this proper sailing stuff. If html is allowed, here is a pic of The Hillbilly Outrigger:

My ultimate goal is to take elderly parents out for leisurely afternoons on state park lakes. I'm struggling with the thought this may be wrong boat, but going to give it a fair shake before buying a stinkpot. I'm a stubborn cuss.

I would like to be able to raise & lower sails from the cockpit, currently have default MKII (I assume it's default). Only reachable hardware from cockpit is cam cleat on either side of deck for jib sheets.

Check out this terminology(!):
I understand I need the plate with pulleys at mast step, and then cleats of some sort near the others. Is there a standard pulley mast plate thingie that the sail shop 90 miles away would have, or do I need to order specific? What type of cleats should I get?
